  • 3 oz salt

  • 1 oz black pepper

  • 2 oz tomato broth

  • 1 oz minced garlic

Preparation

Good, good my people. Today I bring you a slightly complicated recipe if you don't have the patience, but believe me, it's worth the wait. They are the famous tongue tacos, made with the love and passion they deserve. This portion is for approximately four people. Hope you like. Let's get started!


We start by placing a large pot where the tongue and the other ingredients can fit. When the water boils, add the tongue, the garlic cloves, the tomatoes, the whole onion, 1 habanero chile, 5 bay leaves and 2 guajillo chiles so that it takes on color. Add the powders and let it boil for 5 hours with the pot covered with a lid.

After 5 hours, add the tomato puree and let it boil for 10 minutes. This will make your tongue ready.


To ensure cooking, you have to stick a fork in the middle of the tongue; If the fork slips and comes out easily, it is already cooked. If not, you have to leave it longer. After this, the skin covering the meat of the tongue should be removed and chopped to taste.


We move on to the pickling. We chop the red onion into julienne strips and 2 habanero chiles, add the juice of two lemons and a pinch of salt, stir and thus we have the red onion pickle.


For the accompaniment, we have lemons, finely chopped white onion and cilantro.


In some places the tacos are accompanied with the broth where we cook the tongue (consommé), and thus we would have the duo ready to be enjoyed.
