Good, good my people! How are you doing? I hope you are well. Today I bring you a chicken salad, perfect and essential for the summer we are in. Refreshing and nutritious above all. Hope you like. The recipe is approximately for 6 people. Let's get started!
We start with the pickling. We cut the red onion into slices and finely cut two habanero peppers. With the juice of two lemons and a pinch of salt, we prepare the pickle.
For chicken, there are different ways to cook it. In my case, I prefer to roast it, but it can be done in a pan. We just season well with salt and pepper. Once the chicken is cooked, we cut it into small pieces and put it in a bowl.
Add all the finely chopped vegetables or to taste, 1 oz of salt, a pinch of black pepper, the juice of two lemons and the mayonnaise. We stir everything and the chicken salad is ready.
Then all that's left to do is enjoy our salad with those delicious toasts and the spiciness of that pickle. It's finger-lickin' good!
