Orange Enchiladas

Ingredients

Protein or filler:

4 chicken breasts

1 lb of fresh cheese


Dip:

8 russet tomatoes

1/2 ounce oregano

3 jalapenos (optional for a little spice)

1 bell pepper (for not spicy and just flavor)

5 cloves of garlic

1/4 of onion

1 oz salt

1 oz black pepper

1 oz tomato broth

1 oz minced garlic


Others and decoration:

1/2 red onion

1/2 bunch of cilantro

Juice of half a lemon

Corn tortillas (the miracle of preference)

6 oz Vegetable oil


Cream:

1 cup sour cream

1/2 oz salt

4 oz milk


Preparation

For the protein, we start by cutting the breasts in half, add the powders (ground garlic, salt and black pepper), put two cloves of garlic in the pan, add the breasts until cooked on both sides.

 

For the Sauce, cut the vegetables in half and put the tomatoes, onion, garlic and chili in a pan; We cook and put it in the blender, adding the powders and oregano (very important), and we blend everything.


Put the sour cream in a container, squeeze the juice of half a lemon into it, add the salt and milk, and mix until you get the desired consistency.


To make the garnish, cut the red onion into thin slices and the cilantro into medium pieces so that you can see the onion and cilantro in equal parts. Add the juice of half a lemon and a pinch of salt.


Preparation of the enchiladas. In a frying pan we pour a little oil and put each of the tortillas so that they soften on both sides, we take them out and put the chicken or fresh cheese filling on them, we roll them up and place them on the plate. Once we have the tortillas rolled up on the plate, we pour the sauce and cream on top, and in the middle we put the onion and cilantro garnish.
